My ex-boyfriend and I adopted a puppy while we were together. Technically, the adoption was in my name only and it was my idea to get the dog. We worked our schedules so the dog was only alone 6-7 hours per day, yet, we only saw each other on Sundays.
I left that relationship after meeting and falling for a co-worker. So now, my current boyfriend doesn’t want my ex involved in our life at all. I don’t think the dog should have to sit alone for 10+ hours while we work. I let my ex take him on his days off, which are different than mine, and I hire a dog walker on the 2 other days. We argue about this often.

Your significant other has no business dictating who you are and are not allowed to have in your life, first of all. That is controlling behavior and in many contexts a big red flag.
But since you’re not here for relationship advice, let’s focus on the dog.
No, you should not leave your dog alone for 10+ hours/day. It’s good that you have a dog walker come and spend time with the dog on the days someone else cannot.
If your boyfriend has such a problem with your ex spending time with a dog he clearly cares about, see if he’s going to cough up the money for the dog walker to come every day your ex was. If he’s not willing to pay for it then he can sit down and shut up.
If he is willing to pay for it, take some time and consider if you really want to twist the knife on your ex by denying him access to the dog - because that will probably hurt your ex, a lot, and you should consider if you really want to burn that bridge and if your current boyfriend is actively trying to cause your ex emotional pain out of spite.
Tbh I’m super suspicious of your current boyfriend’s motives and would probably throw the whole man out.
